This Chicken has the perfect mix of sweet and savory. Using bone-in, skin-on chicken thighs makes all the diffrence, they stay juicy and get so much flavor while they cook. It's an easy weeknight dinner with almost no prep and comes together in just a few minutes before going into the oven.

Ingredients

8 Tsp brown sugar, divided

8 bone-in-skin- on chicken thighs

16 ounces baby potatoes, halved

16 ounces baby carrots (multi colored)

2 Tbsp olive oil

1 (1-ounce) package of Ranch Seasoning and Salad Dressing Mix

5 cloves of garlic, minced

salt & pepper to taste

Directions
  1. Preheat oven to 450°F. Lightly oil a baking sheet or coat with nonstick spray.

  2. Using your fingers, work the brown sugar, about 1 teaspoon per thigh, onto both sides of the chicken.

  3. Place chicken, potatoes and carrots in a single layer onto the prepared baking sheet. Drizzle with olive oil and sprinkle with Ranch seasoning and garlic, season with salt and pepper to taste.

  4. Place in oven and roast until the chicken reaches 165°F, about 25-35 minutes depending on your oven. Then broil for 2-3 minutes, or until caramelized and slightly charred.
