This meal is one of my biggest crowd pleasers. I've never made it for someone who didn't end up loving it. It's easy to prep ahead for parties, simple enough for dinner, and comes together quickly.

Ingredients

For the Chicken

4 boneless skinless chicken thighs

2 tsp of garlic salt

2 tsp of onion powder

2 tsp of cracked black pepper

For the Salad

2 hearts of romaine lettuce, chopped

2 small cloves of grated garlic

2 Tbsp fresh squeezed lemon juice

1 ½ Tsp Worcestershire sauce

1 cup of Dukes mayonnaise

½ cup of shredded parmesan

1 tsp garlic salt

½ tsp onion powder

Directions
  1. Prepare the salad dressing first. In a large bowl mix together garlic, lemon juice, Worcestershire sauce, garlic salt, onion powder. Mix until well combined, then fold in Parmesan cheese.

  2. Place the chicken thighs on a baking sheet and coat them evenly with the seasoning mixture.

  3. Heat the grill to about 350°-400°, cook chicken thighs until it reaches 165°F. Cooking the chicken to 175°F allows it to become more juicy.

  4. Let the chicken rest for a few minutes, then cut into strips.

  5. Toss your chopped romaine with your dressing.

  6. Build your salad with the sliced BBQ chicken and any other toppings you like, then serve and enjoy.

Katelyn's Korner Tips

Add avocado or bacon for even more flavor.

The dressing can be made ahead and stored covered in the refrigerator for up to 4 days.
